Tuscan Herb Pork Tenderloin

What You’ll Need
- 2 Prairie Fresh USA Prime® pork tenderloins
- Salt and pepper
- 1 bunch fresh sage
- 1 bunch fresh rosemary
- 1 tablespoon Dijon mustard
- 1 baguette
- Olive oil
- 4-5 teaspoons garlic, minced
Directions
- Preheat oven to 375 F.
- Season pork tenderloins with salt and pepper.
- In a large pan on medium-high heat, sear tenderloins. Set aside to cool slightly.
- Chop fresh herbs.
- Coat tenderloins in Dijon mustard and roll through the chopped herbs.
- Cut the baguette in half the long way and scoop out the soft insides.
- Coat the inside of the hollowed baguette with olive oil and minced garlic.
- Add each tenderloin into one half of the baguette.
- With kitchen twine, secure tenderloins at 1-to-2-inch intervals.
- Place tenderloins on a baking sheet.
- Bake for 25-30 minutes or until the internal temperature reaches 145 F.
- Remove kitchen twine and let rest for 10 minutes.
- Slice and enjoy!
