Pork Crown Roast

What You’ll Need
1 Prairie Fresh® bone-in pork loin roast
2 tablespoons sea salt
2 tablespoons coarse ground black pepper
2 tablespoons granulated garlic
Butchers twine
Your favorite BBQ sauce
Directions
How to French Bones:
Remove silver skin from ribs side of pork loin roast and trim fat off top side of roast. Cut down and outward at slight angle across length of roast until hitting bone. Flip roast over and cut across length of roast. Cut through rib meat on top of each bone across length of roast. Trim around each bone. Roll roast into a wheel, securing with butchers twine.
Cooking Pork Crown Roast:
Season pork crown roast with salt, pepper and garlic. Heat grill, smoker or oven to 300 F. Place roast in oven, in smoker or on grill and cook until roast reaches internal temperature of 150 F. Remove butchers twine, slice and enjoy with your favorite BBQ sauce.
