Jalapeño Bacon Loin Filet with Cheesy Rice

What You’ll Need
- Prairie Fresh® Signature Pork Loin Filet with Jalapeño Bacon
- 4 cups white rice, cooked
- 1 cup sour cream
- 4 ounces diced green chiles
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack
- Cilantro to garnish
- Sweet corn (optional side)
Directions
- Preheat oven to 350 F.
- Place pork loin filet on tinfoil-lined baking sheet. Tent tinfoil over pork for perfectly crispy bacon bits without burning.
- In a large bowl, combine rice and remaining ingredients, reserving 1 cup of the cheddar cheese for topping.
- Transfer the rice mixture to a greased 2-quart baking dish, sprinkle reserved 1 cup of cheddar cheese and cover with tinfoil.
- Place both baking dish with rice and baking sheet with pork loin filet in oven.
- Bake rice for 25-30 minutes or until heated through, then remove from oven. Leave tinfoil on baking dish to keep rice warm.
- Roast pork for 34-51 minutes or until it reaches an internal temperature of 155 F. Remove foil during last 5 minutes of cooking to brown.
- Remove pork loin filet from oven and let rest for several minutes before slicing.
- Garnish rice with chopped cilantro, if desired.
- Slice pork loin filet and serve with cheesy rice. Pairs well with a side of sweet corn. Enjoy!
