Hawaiian Sea Salt Pork Filet with Pineapple and Rice

What You’ll Need
- 1 Prairie Fresh Signature Hawaiian Sea Salt & Black Pepper Pork Loin Filet
- 2 cans of pineapple chunks (reserve juice)
- 1/3 cup soy sauce
- 3 tablespoons rice vinegar
- 2 tablespoons garlic, minced
- 1/3 cup brown sugar
- 1/3 cup ketchup
- ½ cup cornstarch
- ½ cup water
Directions
- In a saucepan, sear pork loin filet and set aside.
- In a large bowl, combine pineapple juice (reserve pineapple chunks), soy sauce, rice vinegar, garlic, brown sugar, and ketchup.
- In separate, small bowl, dissolve cornstarch in water and then pour into larger bowl to combine with the rest of the sauce.
- In a slow cooker, add pineapple chunks and then pork loin filet.
- Pour sauce mixture over pork and pineapple chunks.
- Cook and cover on low for 5-6 hours.
- Remove loin filet and slice.
- Service loin filet, sauce, and pineapple chunks over white rice.
