What You’ll Need
1 Prairie Fresh Signature® Applewood Smoked Bacon Tenderloin
1 pound Brussels sprouts, halved
2 tablespoon avocado oil
Salt to taste
Pepper to taste
Multigrain rice blend
Directions
- Spray a sheet pan with cooking oil or cover the surface with parchment paper. Preheat oven to 425 F.
- Add Prairie Fresh Signature® Applewood Smoked Bacon Tenderloin to the center of the sheet.
- Prep Brussels sprouts by trimming the stems and chopping them in half. Arrange around the pork tenderloin.
- Drizzle Brussels sprouts with avocado oil and sprinkle with salt and pepper to taste.
- Bake at 425 F for 23-35 minutes. If Brussels sprouts reach your preferred doneness before the pork has reached an internal temperature of 145 F remove and keep warm in a covered serving dish and place in a microwave.
- In the last 5 minutes of pork cooking time, prep rice. We recommend microwavable rice packets as a fast and easy solution during busy weeks or to save time during meal prep!
- Once pork reaches 145 F, remove and let rest for a few minutes, then slice into medallions. Serve immediately with Brussel sprouts and rice, or portion into meal prep containers for a week's worth of lunches. Enjoy!
