Honey Garlic Crispy Pork Tenderloin over Creamy Mac & Cheese

What You’ll Need
- Prairie Fresh USA Prime® pork tenderloin
- 1 cup seasoned breadcrumbs
- 2 eggs
- ½ cup milk
- Vegetable oil (for pan frying)
- Prepared mac & cheese
Honey Garlic Sauce:
- ¼ cup soy sauce
- ½ cup water
- 1/3 cup honey
- 2 tablespoons light brown sugar
- 2 ½ tablespoons rice vinegar
- Pinch of salt
- 1/8 teaspoon onion powder
- 1 tablespoon cornstarch
- 1 tablespoon minced garlic
Directions
- Pat the outside of the pork tenderloin with a paper towel.
- Cut pieces about 1 ½ inches wide.
- Place the pork pieces into a sealable bag and beat down until the pieces are about ½-inch thick.
- In a separate bowl, add eggs and milk. Mix well.
- Put breadcrumbs into a bowl.
- Dip pork into the egg mixture and then the breadcrumbs.
- Place a large skillet over medium/low heat and add enough vegetable oil to cover the base of the pan.
- Heat the oil for a couple of minutes, then add the pork.
- Cook each side for 3-4 minutes or until internal temperature reaches 145 F or golden brown.
- Place on a paper towel-lined plate to drain excess oil.
- To make the honey garlic sauce: in a small bowl, mix water and cornstarch then add to a small pot and place over low/medium heat.
- Add onion powder, soy sauce, honey, light brown sugar, rice vinegar, minced garlic, and a pinch of salt.
- Cook for 5-8 minutes until thickened.
- Place the pork over prepared mac & cheese, drizzle on the sauce and enjoy!
