What You’ll Need

  • 6oz. Prairie Fresh® Original Breakfast Sausage
  • 1 quiche dough
  • 1 teaspoon olive oil
  • 2 shallots, cut into ¼-inch rings
  • ½ cup mini peppers, cut into ¼-inch slices
  • ½ cup asparagus, cut into ¼-inch pieces
  • ½ cup yellow squash, cut into ¼” slices
  • 2 eggs
  • 2/3 cup milk
  • 2/3 cup cream
  • ½ teaspoon salt
  • ½ teaspoon fresh cracked black pepper
  • ½ cup grated cheddar cheese

Directions

  1. Preheat oven to 350 F.
  2. Heat a medium sized sauté pan over medium heat and brown the sausage while crumbling it into pea sized crumbles. Cook for approximately 7-10 minutes or until cooked through.
  3. Transfer the sausage to a tray.
  4. Return the sauté pan to the heat and add the olive oil. Sauté the shallots and peppers for approximately 3 minutes or until lightly cooked. Add the asparagus and squash and cook for an additional 3 minutes. Transfer the vegetables to the tray with the sausage.
  5. Whisk the eggs, milk, and cream together until fully combined. Stir in the salt and pepper.
  6. Add the sausage, vegetables, and grated cheddar cheese to the quiche crust and pour in the custard.
  7. Place aluminum foil on the edges of the quiche to prevent it from over browning.
  8. Bake the quiche for 45-55 minutes or until completely set in the center.
